The GreenLight Jerky Company was started by my wife and I, when we got tired of the run of the mill mass productions stuff.
After making a batch of jerky in 2005, inspired by an episode of Good Eats on the Food Network, we did not like the end result and started to tinker. After a year or so in our kitchen we had developed a list of 67 possible flavors and in 2007 we brought our first 7 flavors to the world and have been gaining a huge following ever since.
We started as the official jerky of the San Jose Giants minor league baseball team, were featured on the Guy Fieri(Diners Drive Ins and Dives, Minute to Win It) radio show and received BEST rating on some beef jerky review sites. We have also received lots of positive blog reviews including being featured in the book 500 Things To Eat Before Its Too Late by James Beard Award Winning authors Jane and Michael Stern. The former Gourmet Magazine writers of the popular Road Food column, say loudly that ours is 'the most full flavored jerky we've ever savored'!
Why is ours different? We do not use any preservatives, NO MSG, NO Nitrates, NO liquid Smoke, NO partially hyrdrogenated anything, NO desiccant packets, NO added sugar or anything else that you would not want to eat!
In addition what really sets us apart is our vast array of fresh and hand selected ingredients! Here are some of the fresh items we use from George Chiala Farms in Morgan Hill, CA:Fresh Garlic, Fire Roasted Garlic, Fire Roasted Anaheim Chiles, Fresh Habanero Puree, Fresh white onion puree. We also use Fred's Fresh Horseradish and hand selected dried chile grinds from Internation Food Source.
Our product is 100% made in the USA by hand in small batches by Stafford Meat Company. Our beef is sourced from the USA and is USDA inspected free of hormones, steroids and antibiotics. We have worked hand in hand with them to create a product far superior to what we did in our small kitchen. With over 50 years of experience in making jerky for over 40 brands, the family environment (most employees have been there over 10 years) and the fact that they make the product 100% by hand is why we chose them on this journey to bring great home quality jerky to everyone.
